Potato flakes are good for one thing—and it’s not instant mashed potatoes. Look for plain, unseasoned potato flakes, usually near the rice in the store. The recipe for these turkey meatballs is included in the course and one of the live demonstrations.

Even pan fried, they are unlikely to be dry. The potato flakes are an excellent base for creamy potato soups to enhance the texture and add a satisfying flavor.
