Add the maple syrup, avocado oil, vanilla, and egg yolk and stir together until a wet dough is formed. Mix on low speed for 30 seconds. Add egg and vanilla extract and mix on medium for 2 minutes.
Add almond flour, coconut flour, maple syrup, oil and vanilla to a medium bowl.
You can use a flax egg (whisk 1 tbsp ground flax + 3 tbsp water and let sit for five minutes) or preferred egg substitute in place of the egg.
